Taking a virtual stroll down your Instagram timeline reveals at least one (if not more) food influencer obsessed with the benefits of avocados. Packed with monounsaturated fat (or good fat), this bright green fruit has been stealing the limelight for the right reasons. Avocados are a good source of potassium and folate, both of which aid in lowering blood pressure and promoting healthy brain and reproductive functions. The monounsaturated fats in avocados also reduce blood clotting. The abundance of vitamins and minerals means avocado recipes are still in vogue for years to come.

With Starbucks introducing avocado shake variants every season and a museum created for its lovers (Holy Guacamole!), the appreciation for this fruit can't stop (and probably won't stop). With fame comes some unpopularity too. Not long ago, a rumour that took the internet by storm proclaimed avocado to be a non-vegan fruit. But, this myth was hastily debunked and, yet again, avocado recipes have secured the favourite spot in every individual’s heart, regardless of their food choices.


At Freshezy, we went ahead and came up with a recipe that we think does justice to this oh-so-delicious superfood. However, instead of opting for a regular, plain jane avocado recipe, we went ahead and cooked up Avocado Spring Rolls. These ready-to-eat rolls are stuffed with fresh jalapeno peppers, spring onions, sundried tomatoes and cheese, with a dash of herbs to add a savoury tinge.


Now you must have had a plateful of spring rolls at every dinner or night out. There are endless varieties of spring rolls available with the most prominent alternatives ranging from vegetarian to Chinese spring rolls. We’ve grown up eating these frequently to a point where there is little excitement associated with them.
